Veggie Bean Oat Burgers (vegan)!

Next up for our Veganuary recipes are some veggie bean oat burgers. Think falafel crossed with a veggie burger. They are delicious on a bun or in a veggie wrap topped with any of your favorite toppings. They are also easy to make, all you need is a blender or a food processor and a pan to cook them in.

Try these delicious burgers for lunch or dinner and try playing around with different spices or seasonings or veggies. Once you have a good base, its so easy and fun to swap the flavors to create unique burgers. Try a Mediterranean burger by adding dill and topping with vegan tzatziki or swapping out the garbanzos beans for black beans and topping with vegan cheddar cheese and bbq sauce for the fun bbq burger. Veggie Bean Oat Burgers (Vegan)

Ingredients

1 can garbanzo beans (drained and husk removed)

1/2 cup oat flour

1/2 rolled oats (added later)

2 Tb olive oil

2 Tb water (or more as needed)

2 Tb chopped onions

3 white or baby bell mushrooms roughly chopped

1-2 garlic cloves

1 flax egg

1 tsp salt

1/2 tsp Italian seasoning

Instructions

Add all ingredients (except for the rolled oats) to a blender or food processor and blend until everything is mixed well. Mix in the rolled oats with a spoon. It should the consistency of a soft dough or thick batter. If it is too dry then add more water and if its too soft then add more rolled oats. In the end you should be able to spoon it on the griddle and make a patty shape. To cool, heat a pan or griddle and add olive oil. When the griddle is hot, put on the patties and let them cook for around 5 min per side on medium heat or until a golden brown! Top with your favorite toppings and enjoy!
